Frying eggs in a Stainless Steel Pan
So I put this video up in my Instagram stories after I finally achieved stick free eggs in a stainless steel pan and I had many people ask me how to do it.
After many months of trying... and frying, I finally got it. There was a key step missing: a temperature change, that was always neglected in every TikTok video I watched. I was ending up with crispy over fried eggs, definitely not what was desired... and they were still sticking.
Here it the process I learned. For reference, I have a high quality d5 All-Clad stainless steel pan which heats up pretty quickly and evenly. I love them and they will last forever... much longer than coated non-stick pans! Even the All-Clad good quality non-stick, the non-stick ended up peeling off after many years... a known issue with any non-stick coating.
So here we go...
1) Heat up the pan, empty, nothing in it, just get it really hot. We have induction so I did medium low, which I think means a bit over medium setting.
2) You toss some water on the pan to check to see if you have achieved the The Leidenfrost Effect. This is when you flick water onto the pan, it doesn't sizzle and it forms a bubble of water that glides over the pan. This is when it is hot enough.
3) Ditch the floating water bubbles.
4) Take some high smoke point oil, I have Algae Oil, but you can use Avocado, Grepeseed, Ghee and put some in the pan, then take a paper towel to get excess out and just make sure the pan is coated.
5) THIS IS THE KEY: Turn off the heat and let the pan cool a bit. If you put the egg in there now, it will just fry burn and stick. That was my problem!
6) I tested with a bit of butter, cause I love butter, and a dropped a bit in and it sizzeled a bit but didn't burn. I took that it was ready for my eggs. I added more butter and coated the pan as it melted.
7) This was the test, I cracked two eggs. After a bit they slid! The eggs weren't burning, not turning brown and naturally stayed lifted and floating. I had achived it! If they are stuck at first they will naturally lift so be patient!
8) I flipped the eggs and the other side didn't stick either! I had reached enlightenment!
Okay, this was only try one, but I will be trying again.

Your stainless steel pan needs a cooling-off period just like you do after reading an 'urgent' email on a Friday afternoon. Master the Leidenfrost Effect and you'll basically be a kitchen wizard, minus the pointy hat and questionable fashion choices.
